JAM MUFFINS: Sweet Secrets in Every Bite

Jam Muffins
2/3 cups (250g) all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
½ teaspoon salt
2 tbsp granulated sugar
2 tbsp brown sugar
60g unsalted butter, melted, cooled
1 tbsp grated orange zest
1 cup (250ml) buttermilk
1 egg, lightly beaten
1/2 cup jam
Confectioners’ sugar, to dust
Preheat the oven to 400°F. Line 12 cups in a muffin pan with liners or spray cups with non-stick cooking spray.
Sift flour, baking powder, baking soda, salt, granulated sugar, brown sugar, and ½ teaspoon salt into a large bowl. In a separate bowl, combine the melted butter, orange zest, buttermilk, and egg.
Add egg mixture to dry ingredients, then fold together until just combined. Spoon 2 tablespoons batter into the base of each muffin pan. Add 2 teaspoons of fig jam to each, then top with the remaining batter. Top each muffin with a fruit or streusel.
Bake the muffins for 18-20 minutes until light golden brown and a skewer inserted in the center comes out clean. Dust with confectioners’ sugar and serve.
